A twelve-table kitchen above the old assay office on 6th Street. Chef Iris Calloway cooks four nights a week on a single wood-fired hearth. The menu changes the day the fire starts.

"Friday morning Stacey from Anvil Creek brought the first bartletts of the year. Six baskets. We're roasting them in the hearth with smoked honey from the hives behind the kitchen — finishing the dessert plate with a little crème fraîche. Come hungry."

Honey & Hearth opened in 2023 in the upstairs room of a 1903 mining building on 6th Street, Wallace. Twelve seats. One wood-fired hearth. No gas line in the kitchen — by choice.
Chef Iris Calloway grew up cooking on her grandmother's woodstove in Cataldo. She built the hearth herself with a mason from Sandpoint. Every plate that leaves this kitchen has touched fire.
